Zucchini Chips

Instructions
- Thinly slice the zucchinis into 1/8 inch round pieces.
- Beat the eggs in a shallow bowl.
- Process the breadcrumbs, grated cheese, salt, and pepper together until fine and place in a shallow bowl.
- Heat a thin layer of olive oil in a sauté pan over medium heat.
- Set up an assembly line with zucchini slices, beaten eggs, breadcrumb mixture, and a clean plate.
- Using one hand, coat zucchini slices with egg, then transfer to breadcrumb mixture and coat with breadcrumbs.
- Transfer the coated zucchini slices to the clean plate.
- Once enough slices are breaded, place them in the hot oil to cook.
- Check after 2-3 minutes, flip when golden brown, adding more oil if necessary.
- Transfer cooked zucchini to a paper towel-lined plate to drain.
- Repeat until all zucchini are cooked, garnish with additional parmesan, and serve.
