Zucchini Chips

Ingredients

  • 2 medium-sized zucchinis
  • 3 large eggs
  • 1 ½ cups whole-wheat breadcrumbs
  • ½ cup parmesan cheese (grated)
  • to taste olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Thinly slice the zucchinis into 1/8 inch round pieces.
  2. Beat the eggs in a shallow bowl.
  3. Process the breadcrumbs, grated cheese, salt, and pepper together until fine and place in a shallow bowl.
  4. Heat a thin layer of olive oil in a sauté pan over medium heat.
  5. Set up an assembly line with zucchini slices, beaten eggs, breadcrumb mixture, and a clean plate.
  6. Using one hand, coat zucchini slices with egg, then transfer to breadcrumb mixture and coat with breadcrumbs.
  7. Transfer the coated zucchini slices to the clean plate.
  8. Once enough slices are breaded, place them in the hot oil to cook.
  9. Check after 2-3 minutes, flip when golden brown, adding more oil if necessary.
  10. Transfer cooked zucchini to a paper towel-lined plate to drain.
  11. Repeat until all zucchini are cooked, garnish with additional parmesan, and serve.
