Instructions
- Preheat the air fryer to 380°F.
- In a small bowl, mix Panko breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, and salt.
- In a separate bowl, beat the eggs.
- Add flour to a third bowl.
- Dredge zucchini slices in flour, then dip in the beaten eggs, and coat well in the breadcrumb mixture.
- Transfer the coated zucchini slices to the air fryer in a single layer and cook for 10 minutes.
- Flip each slice and cook for an additional 5 minutes.
- Remove from the air fryer and serve with marinara sauce.
