Air Fryer Zucchini

Instructions
- Preheat the oven to 200°F if you want to keep the zucchini warm between batches.
- Trim the ends of the zucchini and cut into quarters lengthwise, then cut crosswise into ¾-inch thick half-moons.
- Place the zucchini in a large mixing bowl and drizzle with olive oil, tossing to coat.
- In a separate bowl, combine panko, Parmesan, flour, salt, onion powder, and pepper, then sprinkle over the zucchini and toss to coat evenly.
- Preheat the air fryer to 400°F and place half of the zucchini in the basket in a single layer.
- Air fry for 7 to 9 minutes, shaking the basket occasionally until the breadcrumbs are golden and the zucchini is tender but not mushy.
- Transfer to a serving plate and repeat with the remaining zucchini.
