Ingredients

The zucchini

  • 1 large zucchini

The coating

  • 1 tablespoon olive oil
  • ¼ cup chickpea flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper

Instructions

  1. Preheat the air fryer to 400ºF.
  2. Slice the zucchini into thin circles, about 1/8-inch thick.
  3. Toss the zucchini slices with olive oil in a bowl.
  4. In a separate bowl, mix chickpea flour, salt, garlic powder, and black pepper.
  5. Dredge each zucchini slice in the flour mixture, coating both sides, and shake off excess flour.
  6. Place the coated zucchini slices in a single layer in the air fryer tray.
  7. Cook the zucchini at 400ºF for 10 minutes, then flip the slices and remove any that are dark brown.
  8. Cook for an additional 5 minutes or until evenly golden.
  9. Serve immediately for the best taste and texture.
