Instructions
- Preheat the air fryer to 400ºF.
- Slice the zucchini into thin circles, about 1/8-inch thick.
- Toss the zucchini slices with olive oil in a bowl.
- In a separate bowl, mix chickpea flour, salt, garlic powder, and black pepper.
- Dredge each zucchini slice in the flour mixture, coating both sides, and shake off excess flour.
- Place the coated zucchini slices in a single layer in the air fryer tray.
- Cook the zucchini at 400ºF for 10 minutes, then flip the slices and remove any that are dark brown.
- Cook for an additional 5 minutes or until evenly golden.
- Serve immediately for the best taste and texture.
