Ingredients

The zucchini chips

  • 2 medium zucchini
  • 1 large egg
  • ½ cup panko bread crumbs
  • ½ cup almond flour
  • ¼ cup Parmesan cheese or Vegan Parmesan
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper
  • for drizzling ml extra-virgin olive oil

Optional serving

  • to taste marinara sauce

Instructions

  1. Preheat the air fryer to 370°F.
  2. Pat the zucchini dry with a clean kitchen towel and set aside.
  3. Whisk the egg in a small bowl.
  4. In a medium bowl, combine the panko, almond flour, Parmesan, salt, and pepper.
  5. Dip each zucchini slice into the egg, then into the panko mixture.
  6. Place the breaded slices on a plate and drizzle with olive oil.
  7. Arrange the slices in a single layer in the air fryer basket.
  8. Air fry for 11 to 13 minutes until crisp and golden brown.
  9. Serve immediately with marinara for dipping, if desired.
