Air Fryer Zucchini Fries

Instructions
- Prepare the zucchini by trimming the ends and cutting it into sticks about ⅓ inch thick and 3 to 4 inches long. Sprinkle salt over the zucchini and let it sweat for 10 minutes. Pat dry with a paper towel.
- In a shallow bowl, whisk together the parmesan or nutritional yeast, flax meal, almond flour, and seasonings. In another bowl, whisk the egg.
- Dip the zucchini strips into the egg, then coat them with the flax meal and cheese mixture.
- Preheat the air fryer to 400°F and spray the basket with cooking oil. Place the coated zucchini in a single layer and lightly spray them with oil.
- Air fry for 7 to 9 minutes until golden and crispy. Remove carefully and continue cooking in batches if necessary.
