Instructions
- Preheat the oven to 450°F and line a broil-safe baking sheet with foil if desired.
- Slice the zucchini into 1/4 to 1/2-inch rounds and place them on the baking sheet.
- Drizzle the zucchini with olive oil and toss to coat evenly.
- Spread the zucchini slices in a single layer and sprinkle generously with salt and pepper.
- Top each slice with parmesan cheese.
- Bake in the center of the oven for about 10 minutes until the zucchini is fork-tender.
- Switch on the broiler and broil for 2 to 3 minutes until the cheese is bubbly and browned.
