Instructions
- Preheat the oven to 400°F.
- Rinse and dry the zucchini, then slice it into ½-inch thick slices.
- Combine salt, black pepper, smoked paprika, and garlic powder in a small bowl.
- Drizzle olive oil over the zucchini slices in a large bowl.
- Sprinkle the seasoning mixture over the oiled zucchini and toss to coat.
- Prepare a baking sheet with aluminum foil and place a wire rack on top.
- Arrange the seasoned zucchini slices in a single layer on the wire rack.
- Sprinkle grated parmesan cheese over the zucchini slices.
- Bake in the preheated oven for 10-12 minutes until golden brown.
