Ingredients

The zucchini

  • 1 pound zucchini

The seasoning

  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon sea salt
  • ¼ teaspoon garlic powder
  • to taste freshly ground black pepper
  • 1 lemon for squeezing
  • to taste crumbled feta cheese, grated Parmesan cheese, pecorino cheese, or Vegan Parmesan
  • to taste fresh herbs

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Cut the zucchini into thick, 1-inch half-moons and place them in a large bowl.
  3. Toss the zucchini with olive oil, Italian seasoning, salt, garlic powder, and black pepper until well coated.
  4. Spread the zucchini evenly on the prepared baking sheet.
  5. Roast in the oven for 15 to 20 minutes, or until golden brown around the edges.
  6. Remove from the oven, transfer to a serving dish, and squeeze lemon juice over the top.
  7. Sprinkle with cheese and herbs if desired before serving.
