Instructions
- Preheat the oven to 400°F (204°C) and line a baking sheet with foil or parchment paper if desired.
- Cut off the ends of the zucchini, then cut each zucchini in half and slice lengthwise into spears.
- In a large bowl, toss the zucchini sticks with olive oil and season with Italian seasoning, garlic powder, sea salt, and black pepper.
- Arrange the zucchini sticks in a single layer on the baking sheet without touching.
- Roast in the preheated oven for 7 minutes, then flip and continue roasting for an additional 8-13 minutes until tender and golden brown.
- Optionally, broil for 1-2 minutes for extra browning.
