Instructions
- Preheat the oven to 350°F and line a rimmed cookie sheet with aluminum foil.
- Cut the zucchini into 4 wedges lengthwise.
- In a small bowl, mix together the olive oil, lemon zest, and minced garlic.
- Arrange the zucchini on the prepared baking sheet, spacing them evenly.
- Brush the olive oil mixture over the zucchini, ensuring some garlic and lemon zest is on each piece.
- Sprinkle the tops with parmesan cheese and season with salt and pepper.
- Bake in the preheated oven for 11-13 minutes.
- Adjust the oven rack near the top and broil for a few minutes until the parmesan is golden brown.
- Serve warm.
