Ingredients

The zucchini

  • lbs zucchini

The seasoning

  • 2 Tbsp olive oil
  • 1 tsp lemon zest
  • 2 cloves garlic
  • ¾ cup finely shredded parmesan cheese
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 350°F and line a rimmed cookie sheet with aluminum foil.
  2. Cut the zucchini into 4 wedges lengthwise.
  3. In a small bowl, mix together the olive oil, lemon zest, and minced garlic.
  4. Arrange the zucchini on the prepared baking sheet, spacing them evenly.
  5. Brush the olive oil mixture over the zucchini, ensuring some garlic and lemon zest is on each piece.
  6. Sprinkle the tops with parmesan cheese and season with salt and pepper.
  7. Bake in the preheated oven for 11-13 minutes.
  8. Adjust the oven rack near the top and broil for a few minutes until the parmesan is golden brown.
  9. Serve warm.
