Instructions
- Pat the mozzarella slices dry and place them between paper towels to absorb extra moisture.
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Slice the zucchini lengthwise into thin sheets and pat dry if necessary.
- Arrange the zucchini on the baking sheet, brush with olive oil, and sprinkle with salt, garlic powder, basil, and parmesan.
- Roast the zucchini for 20-25 minutes until tender and slightly golden.
- Spread marinara sauce in a casserole dish, layer with zucchini, marinara, and mozzarella, and repeat the layers.
- Bake for about 15 minutes until hot, broil for 2-3 minutes for browning if desired, and garnish with fresh basil.
