Zucchini Parmesan

Ingredients

The zucchini and cheese

  • 2 lb Zucchini
  • 32 oz Fresh mozzarella cheese
  • 1 cup Grated parmesan cheese

The seasonings and oil

  • 3 tbsp Olive oil
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • 2 tsp Dried basil
  • 1 tsp Garlic powder

The sauce

  • 2 ¾ cups Marinara sauce
  • Fresh basil optional for garnish

Instructions

  1. Pat the mozzarella slices dry and place them between paper towels to absorb extra moisture.
  2. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  3. Slice the zucchini lengthwise into thin sheets and pat dry if necessary.
  4. Arrange the zucchini on the baking sheet, brush with olive oil, and sprinkle with salt, garlic powder, basil, and parmesan.
  5. Roast the zucchini for 20-25 minutes until tender and slightly golden.
  6. Spread marinara sauce in a casserole dish, layer with zucchini, marinara, and mozzarella, and repeat the layers.
  7. Bake for about 15 minutes until hot, broil for 2-3 minutes for browning if desired, and garnish with fresh basil.
