Ingredients

The muffins

  • 2 cups mashed sweet potato
  • cup brown sugar or granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ¾ cup evaporated milk
  • ¾ cup oat flour or quick oats
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon coarse salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda

The crumble

  • 5 pieces graham crackers
  • 2 tablespoons melted butter
  • 1 tablespoon brown sugar or granulated sugar

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners and cooking spray.
  2. In a bowl, mix together the mashed sweet potato, sugar, eggs, and vanilla until combined, then stir in the evaporated milk.
  3. In another bowl, combine the oat flour, pumpkin pie spice, salt, baking powder, and baking soda.
  4. Mix the wet ingredients into the dry ingredients until smooth and fill each muffin cup about ¾ full.
  5. In a small bowl, combine the crushed graham crackers, melted butter, and sugar, then sprinkle on top of the muffin batter.
  6. Bake for 18-22 minutes until set, then allow to cool before serving.
