Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners and cooking spray.
- In a bowl, mix together the mashed sweet potato, sugar, eggs, and vanilla until combined, then stir in the evaporated milk.
- In another bowl, combine the oat flour, pumpkin pie spice, salt, baking powder, and baking soda.
- Mix the wet ingredients into the dry ingredients until smooth and fill each muffin cup about ¾ full.
- In a small bowl, combine the crushed graham crackers, melted butter, and sugar, then sprinkle on top of the muffin batter.
- Bake for 18-22 minutes until set, then allow to cool before serving.
