Instructions
- Make the mousse by melting the chocolate and mixing it with whipped cream, powdered sugar, and vanilla. Chill in the fridge.
- Preheat the oven to 350°F and grease ramekins or cupcake molds.
- Crush the graham crackers and mix with honey and melted butter to form the crust. Press into the ramekins.
- Combine dry ingredients for the chocolate cake in one bowl and wet ingredients in another. Mix them together and add hot coffee and chocolate chips.
- Pour the batter into the prepared molds and bake for 20-25 minutes. Let cool before removing from molds.
- Cut a cone from the center of each cake and fill with the chilled mousse. Freeze or chill until ready to add meringue.
- Whip egg whites until stiff peaks form, gradually adding sugar and vinegar.
- Spread meringue over the cakes and use a torch or broiler to brown the meringue. Serve immediately.
