Ingredients

Cheaters Chocolate Mousse

  • 1 cup heavy whipping cream
  • 4 ounces semi-sweet or milk chocolate, chopped
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract

Graham Cracker Crust

  • 9 sheets graham crackers
  • 2 tablespoons honey
  • ¼ cup unsalted butter, melted

Chocolate Cakes

  • ¾ cup all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg, at room temperature
  • ½ cup buttermilk
  • ¼ cup canola oil
  • 1 ½ teaspoons vanilla extract
  • cup strong brewed coffee, hot
  • ¼ cup semi-sweet chocolate chips

Meringue

  • 4 large egg whites
  • 1 cup caster sugar
  • 1 teaspoon vinegar

Instructions

  1. Make the mousse by melting the chocolate and mixing it with whipped cream, powdered sugar, and vanilla. Chill in the fridge.
  2. Preheat the oven to 350°F and grease ramekins or cupcake molds.
  3. Crush the graham crackers and mix with honey and melted butter to form the crust. Press into the ramekins.
  4. Combine dry ingredients for the chocolate cake in one bowl and wet ingredients in another. Mix them together and add hot coffee and chocolate chips.
  5. Pour the batter into the prepared molds and bake for 20-25 minutes. Let cool before removing from molds.
  6. Cut a cone from the center of each cake and fill with the chilled mousse. Freeze or chill until ready to add meringue.
  7. Whip egg whites until stiff peaks form, gradually adding sugar and vinegar.
  8. Spread meringue over the cakes and use a torch or broiler to brown the meringue. Serve immediately.
