Ingredients

The cake

  • ½ cup unsalted butter, softened to room temperature
  • ¾ cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg, room temperature
  • 1 cup all-purpose flour (spooned & leveled)
  • 1 cup graham cracker crumbs (9 graham crackers)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

The filling

  • 1 heaping cup marshmallow creme (Fluff)
  • ¾ cup semi-sweet chocolate chips
  • ¾ cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9-inch pie dish or round cake pan.
  2. In a bowl, cream together the butter and brown sugar until smooth, then mix in the vanilla and egg.
  3. In another bowl, combine the flour, graham cracker crumbs, baking powder, and salt, then mix into the wet ingredients.
  4. Press 2/3 of the dough into the prepared pan, spread marshmallow creme on top, and sprinkle with chocolate chips and mini marshmallows.
  5. Layer the remaining dough on top, leaving some marshmallow and chocolate chips exposed.
  6. Bake for 25 minutes until lightly golden brown, then cool for at least 30 minutes before serving.
