Ingredients

The cookie dough

  • ¾ cup unsalted butter, softened to room temperature
  • ¾ cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour (spooned & leveled)
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • cups semi-sweet chocolate chips

The toppings

  • 12 regular marshmallows, cut in half
  • 4 ounces semi-sweet chocolate bar, finely chopped
  • cup crushed graham cracker crumbs

Instructions

  1. Beat the butter, brown sugar, and granulated sugar together until creamy, then add the egg and vanilla.
  2. Combine the dry ingredients in a separate bowl and mix into the wet ingredients until combined, then chill the dough for at least 1 hour.
  3. Preheat the oven and roll the chilled dough into balls.
  4. Bake the cookies until barely golden, then add a marshmallow half on top of each cookie.
  5. Broil the cookies until the marshmallows are toasted.
  6. Melt the chocolate and spoon it over the marshmallows, then sprinkle with graham cracker crumbs.
  7. Allow the chocolate to set before serving.
