Ingredients

The cookie dough

  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 3/4 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 1 cup semi-sweet chocolate chips

The toppings

  • 2 ounces semi-sweet chocolate or Hershey’s bar, chopped
  • 2 full sheets graham crackers, broken into pieces
  • 1/2 cup miniature marshmallows

Instructions

  1. Whisk together the flour, baking soda, cornstarch, and salt in a large bowl.
  2. In a medium bowl, whisk the melted butter, brown sugar, and granulated sugar until smooth, then add the egg, egg yolk, and vanilla.
  3. Combine the wet and dry ingredients, mixing until a soft dough forms, then fold in the chocolate chips.
  4. Cover the dough and chill in the refrigerator for at least 2-3 hours or overnight.
  5. Preheat the oven to 325°F (163°C) and line baking sheets with parchment paper.
  6. Scoop the dough into balls and place them on the baking sheets.
  7. Bake the cookies for 12 minutes, then remove from the oven and add the toppings.
  8. Return the cookies to the oven for an additional 2-3 minutes until the toppings are toasted.
  9. Cool the cookies on the baking sheet for 10 minutes before transferring them to a wire rack.
