Ingredients

The cookies

  • 1 cup butter, softened to room temperature
  • ¾ cup granulated sugar
  • ¾ cup light or dark brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • ¾ cup natural, unsweetened or Dutch-process cocoa powder
  • 1 cup coarse graham cracker crumbs
  • 2 cups semisweet chocolate chips

The toppings

  • ½ cup mini marshmallows
  • ½ cup coarse graham cracker crumbs
  • ½ cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a mixer, combine butter, granulated sugar, brown sugar, baking soda, and salt, mixing until light and fluffy.
  3. Add eggs and vanilla, mixing until well combined.
  4. Incorporate flour, cocoa powder, and graham cracker crumbs until just combined, then add chocolate chips.
  5. Roll 2-3 tablespoons of dough into balls and space them on the baking sheets.
  6. Bake for 7-8 minutes, then press mini marshmallows into the tops of the cookies.
  7. Sprinkle graham cracker crumbs on top and return to the oven for another 1-2 minutes.
  8. Remove from the oven and let cool completely.
  9. Melt chocolate chips and drizzle over the cooled cookies before serving.
