Ingredients

The cookie dough

  • 2 cups all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 6 tablespoons unsalted butter
  • ½ cup light or dark brown sugar
  • ½ cup granulated sugar
  • ½ teaspoon pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 4 ounces semi-sweet chocolate chips or wafers
  • 1 graham cracker

The topping

  • 2 ounces small marshmallows

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a stand mixer, beat together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the vanilla, egg, and egg yolk, mixing until just combined.
  5. Add the flour mixture all at once and mix until cohesive.
  6. Stir in the chocolate chips and crushed graham cracker.
  7. Scoop out balls of dough onto the baking sheet, spacing them apart.
  8. Bake for 5 minutes, then add mini marshmallows on top and return to the oven.
  9. Bake for an additional 6 to 7 minutes until the marshmallows are golden brown.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
