Instructions
- Whisk egg yolks, sugar, and salt in a heat-proof bowl and set aside.
- Simmer 3/4 cup heavy cream in a saucepan.
- Temper the egg yolks by whisking in warm cream, then return mixture to the saucepan and cook until thickened.
- Remove from heat and stir in vanilla extract.
- Melt chopped chocolate and mix with the egg yolk mixture.
- Whip the remaining heavy cream to medium peaks and gently fold in the chocolate mixture.
- Layer graham cracker crumbs and chocolate mousse in serving cups.
- Chill for at least 3 hours before serving.
- Prepare marshmallow topping by whisking egg whites, sugar, and cream of tartar over simmering water until dissolved, then beat until stiff peaks form.
- Top each mousse cup with marshmallow cream and toast if desired.
