Ingredients

Chocolate Mousse

  • 4 large egg yolks
  • ¼ cup granulated sugar
  • teaspoon salt
  • 2 cups heavy cream
  • 1 teaspoon pure vanilla extract
  • 2 4-ounce bars semi-sweet chocolate
  • 1 cup graham cracker crumbs

Marshmallow Topping

  • 4 large egg whites
  • 1 cup granulated sugar
  • ½ teaspoon cream of tartar
  • ½ teaspoon pure vanilla extract

Instructions

  1. Whisk egg yolks, sugar, and salt in a heat-proof bowl and set aside.
  2. Simmer 3/4 cup heavy cream in a saucepan.
  3. Temper the egg yolks by whisking in warm cream, then return mixture to the saucepan and cook until thickened.
  4. Remove from heat and stir in vanilla extract.
  5. Melt chopped chocolate and mix with the egg yolk mixture.
  6. Whip the remaining heavy cream to medium peaks and gently fold in the chocolate mixture.
  7. Layer graham cracker crumbs and chocolate mousse in serving cups.
  8. Chill for at least 3 hours before serving.
  9. Prepare marshmallow topping by whisking egg whites, sugar, and cream of tartar over simmering water until dissolved, then beat until stiff peaks form.
  10. Top each mousse cup with marshmallow cream and toast if desired.
