Instructions
- Preheat the oven to 350°F (177°C).
- Prepare the crust by mixing graham cracker crumbs, melted butter, and granulated sugar, then press into tartlet pans and pre-bake for 10 minutes.
- For the filling, heat heavy cream in a saucepan until boiling, then pour it over chopped chocolate and butter, stirring until smooth.
- Pour the chocolate ganache into the cooled crusts and refrigerate for at least 2 hours until firm.
- To make the topping, whisk egg whites, sugar, and cream of tartar over simmering water until warm, then beat until soft peaks form and add vanilla.
- Spread the marshmallow topping over the tartlets and toast with a kitchen torch if desired.
- Serve immediately or refrigerate leftovers for up to 3 days.
