Ingredients

Crust

  • cups graham cracker crumbs
  • 6 Tablespoons unsalted butter, melted
  • ¼ cup granulated sugar

Filling

  • 12 ounces semi-sweet chocolate, coarsely chopped
  • ¼ cup unsalted butter, cubed
  • 1 cup heavy cream

Marshmallow Meringue Topping

  • 2 large egg whites
  • ½ cup granulated sugar
  • teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Prepare the crust by mixing graham cracker crumbs, melted butter, and granulated sugar, then press into tartlet pans and pre-bake for 10 minutes.
  3. For the filling, heat heavy cream in a saucepan until boiling, then pour it over chopped chocolate and butter, stirring until smooth.
  4. Pour the chocolate ganache into the cooled crusts and refrigerate for at least 2 hours until firm.
  5. To make the topping, whisk egg whites, sugar, and cream of tartar over simmering water until warm, then beat until soft peaks form and add vanilla.
  6. Spread the marshmallow topping over the tartlets and toast with a kitchen torch if desired.
  7. Serve immediately or refrigerate leftovers for up to 3 days.
