Ingredients

The Chicken

  • 2 pieces chicken breasts, sliced in half or 4 thin chicken breasts
  • 1 cup flour (optional)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ¼ teaspoon paprika
  • to taste salt and pepper

The Garlic Cream Sauce

  • 1 tablespoon oil
  • 1 teaspoon butter
  • 1 tablespoon minced garlic (about 3-4 cloves)
  • 1 teaspoon Italian seasoning
  • ¾ cup chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, roughly chopped
  • 4 cups fresh spinach
  • to taste salt
  • for serving lemon wedges

Instructions

  1. Whisk together flour (if using), Italian seasoning, garlic powder, and paprika in a medium bowl. Season chicken with salt and pepper, then coat with the spice mixture.
  2. Heat oil in a large skillet over medium-high heat. Cook the chicken for about 3-4 minutes on each side until golden and cooked through. Transfer the chicken to a plate.
  3. In the same pan, melt butter and sauté garlic and Italian seasoning for about 30 seconds until fragrant.
  4. Add chicken broth to the pan, scraping any browned bits from the bottom. Stir in cream and Parmesan cheese, cooking for 5-7 minutes until the sauce thickens slightly.
  5. Stir in sun-dried tomatoes and spinach, simmering for 2-3 minutes until the spinach wilts.
  6. Return the chicken to the skillet, heating for an additional 2-3 minutes. Spoon sauce over the chicken and serve with pasta or your choice of sides.
