Instructions
- Whisk together flour (if using), Italian seasoning, garlic powder, and paprika in a medium bowl. Season chicken with salt and pepper, then coat with the spice mixture.
- Heat oil in a large skillet over medium-high heat. Cook the chicken for about 3-4 minutes on each side until golden and cooked through. Transfer the chicken to a plate.
- In the same pan, melt butter and sauté garlic and Italian seasoning for about 30 seconds until fragrant.
- Add chicken broth to the pan, scraping any browned bits from the bottom. Stir in cream and Parmesan cheese, cooking for 5-7 minutes until the sauce thickens slightly.
- Stir in sun-dried tomatoes and spinach, simmering for 2-3 minutes until the spinach wilts.
- Return the chicken to the skillet, heating for an additional 2-3 minutes. Spoon sauce over the chicken and serve with pasta or your choice of sides.
