Creamy Tuscan Chicken

Instructions
- Heat olive oil in a large pan over medium-high heat and season chicken with salt and pepper.
- Cook the chicken for 4-5 minutes on each side until golden brown and cooked through, then remove and keep warm.
- Melt butter in the same pan, add mushrooms and cook until tender and golden brown.
- Add garlic and cook briefly, then stir in flour until well combined.
- Pour in chicken broth and heavy cream, whisking until combined, and bring to a simmer.
- Season the sauce with salt and pepper, then stir in parmesan cheese, spinach, and sun dried tomatoes until the spinach wilts.
- Return the chicken to the pan, spoon sauce over it, sprinkle with parsley, and serve immediately.
