Creamy Tuscan Chicken

Ingredients

The chicken

  • 1 1/4 lbs thin boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • to taste salt and pepper

The sauce

  • 2 tablespoons butter
  • 8 ounces button mushrooms, sliced
  • 1 tablespoon flour
  • 1 1/2 teaspoons minced garlic
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 cup baby spinach leaves
  • 1/3 cup oil packed sun dried tomatoes, coarsely chopped
  • 1 tablespoon chopped parsley

Instructions

  1. Heat olive oil in a large pan over medium-high heat and season chicken with salt and pepper.
  2. Cook the chicken for 4-5 minutes on each side until golden brown and cooked through, then remove and keep warm.
  3. Melt butter in the same pan, add mushrooms and cook until tender and golden brown.
  4. Add garlic and cook briefly, then stir in flour until well combined.
  5. Pour in chicken broth and heavy cream, whisking until combined, and bring to a simmer.
  6. Season the sauce with salt and pepper, then stir in parmesan cheese, spinach, and sun dried tomatoes until the spinach wilts.
  7. Return the chicken to the pan, spoon sauce over it, sprinkle with parsley, and serve immediately.
