Ingredients

The main ingredients

  • 4 pieces chicken thighs (or chicken breasts)
  • ½ cup sun-dried tomatoes
  • 3 cups spinach
  • ¼ cup basil, chopped

The sauce

  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • ¼ cup chicken broth
  • 2 tablespoons arrowroot starch
  • cups coconut milk

The aromatics

  • 1 piece shallot, diced
  • 4 cloves garlic, minced

For cooking

  • 2 tablespoons ghee (or avocado oil)

Optional garnish

  • to taste chopped parsley

Instructions

  1. Prepare the shallot and garlic, and mix the Italian seasoning with salt and pepper in a bowl.
  2. If using chicken breasts, pound them to an even thickness.
  3. Heat a skillet over medium heat, add ghee, and season the chicken with the Italian mix.
  4. Cook the chicken undisturbed for 4-5 minutes until browned, then flip and cook for another 4-5 minutes.
  5. While the chicken cooks, whisk together the chicken broth and arrowroot starch.
  6. Remove the chicken and set aside. Add more ghee if necessary, then add the shallot and garlic to the pan and cook for 1-2 minutes.
  7. Add the coconut milk, sun-dried tomatoes, and basil to the pan.
  8. Whisk the broth mixture again and pour it into the pan, stirring to combine and scrape up any browned bits.
  9. Return the chicken to the skillet, cover, and simmer for 3-4 minutes until fully cooked.
  10. Stir in the spinach until wilted, then serve with your choice of side.
