25-Minute Creamy Tuscan Chicken

Instructions
- Prepare the shallot and garlic, and mix the Italian seasoning with salt and pepper in a bowl.
- If using chicken breasts, pound them to an even thickness.
- Heat a skillet over medium heat, add ghee, and season the chicken with the Italian mix.
- Cook the chicken undisturbed for 4-5 minutes until browned, then flip and cook for another 4-5 minutes.
- While the chicken cooks, whisk together the chicken broth and arrowroot starch.
- Remove the chicken and set aside. Add more ghee if necessary, then add the shallot and garlic to the pan and cook for 1-2 minutes.
- Add the coconut milk, sun-dried tomatoes, and basil to the pan.
- Whisk the broth mixture again and pour it into the pan, stirring to combine and scrape up any browned bits.
- Return the chicken to the skillet, cover, and simmer for 3-4 minutes until fully cooked.
- Stir in the spinach until wilted, then serve with your choice of side.
