Ingredients

Sesame Soy Dressing

  • ½ teaspoon sesame oil
  • tablespoons liquid aminos
  • 1 teaspoon water
  • ½ teaspoon rice wine vinegar
  • 1 teaspoon maple syrup

Vegan Sushi Rice Bowl

  • 1 cup cauliflower rice
  • ½ cucumber julienned
  • a few slices of sushi ginger
  • ¼ avocado sliced
  • 3-5 crispy nori sheets
  • 1 medium size carrot, peeled then ribboned
  • ½ red bell pepper sliced

Instructions

  1. Prepare the sesame soy dressing by mixing all the dressing ingredients in a jar and shaking vigorously.
  2. Add all the bowl ingredients to a serving bowl.
  3. Pour some of the sesame soy dressing over the bowl, especially on the cauliflower rice, and mix to combine.
  4. Enjoy your Vegan Sushi Rice Bowl!
