Instructions
- Make the dressing by whisking all dressing ingredients in a small bowl until combined.
- Prepare the cauliflower rice by blending cauliflower chunks in a food processor until rice-like.
- Heat olive oil in a large pan over medium heat, then add the cauliflower rice and cook until softened, about 5-7 minutes.
- Divide the cauliflower rice into 4 bowls and top each with equal portions of tofu, beets, cucumber, avocado, and nori.
- Drizzle the desired amount of dressing over each bowl and serve.
