Ingredients

The dressing

  • ¼ cup canola oil or any neutral-flavored oil
  • 2 teaspoons tamari or soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon maple syrup
  • ¼ teaspoon sesame seeds (optional)

The sushi bowls

  • 1 large head cauliflower
  • 1 teaspoon olive oil
  • 1 6 oz package baked tofu
  • 1 large cucumber
  • 2 small beets
  • 2 medium avocados
  • 1 cup chopped nori

Instructions

  1. Make the dressing by whisking all dressing ingredients in a small bowl until combined.
  2. Prepare the cauliflower rice by blending cauliflower chunks in a food processor until rice-like.
  3. Heat olive oil in a large pan over medium heat, then add the cauliflower rice and cook until softened, about 5-7 minutes.
  4. Divide the cauliflower rice into 4 bowls and top each with equal portions of tofu, beets, cucumber, avocado, and nori.
  5. Drizzle the desired amount of dressing over each bowl and serve.
