Crispy Roasted Brussels Sprouts with Goat Cheese and Walnuts

Ingredients

The Brussels Sprouts

  • 1 cup walnut halves and pieces
  • 1 ½ pound Brussels sprouts, trimmed and halved
  • 1 tablespoon grapeseed oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon maple syrup
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • to taste salt
  • 2 ounces goat cheese, crumbled

For Serving

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • to taste fresh mint leaves (optional)
  • to taste parsley (optional)

Instructions

  1. Preheat the oven to 350°F with a baking sheet inside.
  2. Toast the walnuts on the baking sheet for about 5 minutes until golden brown and fragrant, then set aside.
  3. Increase the oven temperature to 450°F and prepare the Brussels sprouts by tossing them with oil, balsamic vinegar, maple syrup, onion powder, garlic powder, and salt.
  4. Spread the Brussels sprouts on the baking sheet and roast for about 20 minutes until the edges are brown and crispy.
  5. Add crumbled goat cheese on top of the Brussels sprouts and roast for an additional 5 minutes until the cheese is warm and softened.
  6. Transfer the Brussels sprouts to a serving dish, add the toasted walnuts, drizzle with olive oil and balsamic vinegar, and toss gently.
