Instructions
- Preheat the oven to 400°F and position the rack in the center.
- Trim and quarter the Brussels sprouts, then toss them in a medium bowl with 1 tablespoon of olive oil, salt, and pepper.
- Roast the Brussels sprouts in the oven for 25-35 minutes, stirring halfway through.
- Add the walnut pieces to the pan during the last 10 minutes of roasting.
- Remove from the oven, toss with the remaining olive oil, adjust seasoning, and top with crumbled blue cheese before serving.
