Instructions
- Preheat the oven to 400°F and move the rack to the center position.
- Trim and quarter the Brussels sprouts, then place them in a medium bowl.
- Toss the sprouts with 1 tablespoon of olive oil, salt, and pepper.
- Roast the Brussels sprouts in the oven for 25-35 minutes, stirring halfway through.
- Add the walnut pieces to the pan during the last 10 minutes of cooking.
- Remove from the oven, toss with the remaining olive oil, and adjust seasoning.
- Top with crumbled blue cheese just before serving.
