Ingredients

The chicken

  • pounds boneless skinless chicken breasts
  • 1 tablespoon extra virgin olive oil

The breading

  • ¼ cup whole wheat breadcrumbs
  • ¼ cup freshly grated Parmesan
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • teaspoon ground cayenne pepper
  • teaspoon kosher salt

Instructions

  1. Cut each chicken breast in half lengthwise to create 6 pieces and pound to an even thickness.
  2. Drizzle the chicken with olive oil and toss to coat.
  3. Combine breadcrumbs, Parmesan, and seasonings in a bowl.
  4. Coat each chicken piece in the breadcrumb mixture.
  5. Preheat the air fryer to 390°F and arrange the chicken in a single layer in the basket.
  6. Air fry for 4 minutes, flip, and continue cooking for 2 to 5 additional minutes until the chicken reaches 165°F.
