Ingredients

The potatoes

  • 5 pieces small to medium russet potatoes
  • to taste Extra-virgin olive oil
  • to taste Sea salt
  • to taste Freshly ground black pepper

Coconut Bacon

  • cups unsweetened coconut flakes
  • tablespoons tamari
  • scant 1 tablespoon maple syrup
  • ½ teaspoon smoked paprika

Sunflower Vegan Sour Cream

  • cups hulled raw sunflower seeds
  • 1 cup water
  • 1 clove garlic
  • 2 tablespoons white wine vinegar
  • 1 tablespoon lemon juice
  • ½ teaspoon sea salt

Black Bean & Corn Filling

  • 1 14-ounce can black beans, drained and rinsed
  • ¾ cup frozen corn kernels
  • ¼ cup diced red onion
  • 1 clove garlic, minced
  • 1 tablespoon fresh lime juice
  • ½ teaspoon chili powder
  • ½ cup chopped cilantro
  • ½ teaspoon sea salt

Garnish

  • to taste Chives, sliced
  • to taste Jalapeño pepper, diced (optional)
  • to taste Cilantro, chopped

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper for the coconut bacon.
  2. Combine coconut flakes, tamari, maple syrup, and smoked paprika on the baking sheet and bake for 8 to 10 minutes until golden brown.
  3. Increase the oven temperature to 400°F and prepare another baking sheet for the potatoes.
  4. Scrub the potatoes, poke holes in them, and bake for 1 hour until fork-tender.
  5. Once cool, slice each potato in half and scoop out the flesh, leaving a ¼-inch lining.
  6. Drizzle the potato skins with olive oil, salt, and pepper, then roast cut-side down for 10 minutes.
  7. Turn the skins, drizzle with more olive oil, and roast for another 10 minutes until crispy.
  8. Blend the sunflower seeds, water, garlic, vinegar, lemon juice, and salt until creamy for the sunflower sour cream.
  9. In a bowl, mix black beans, corn, red onion, garlic, lime juice, chili powder, cilantro, and salt for the filling.
  10. Scoop the filling into the potato skins, top with sunflower sour cream and coconut bacon, and garnish before serving.
