Ingredients

The potato skins

  • 5 small Russet potatoes
  • 2-3 tablespoons ghee or butter
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp freshly cracked black pepper

The guacamole

  • 2 ripe avocados
  • ½ lemon juice
  • 1 tsp sea salt

The toppings

  • 4 green onions thinly sliced
  • 5 slices bacon
  • ½ cup ranch dressing

Instructions

  1. Preheat the oven to 400°F and wash the potatoes, piercing them with a fork.
  2. Bake the potatoes for about 50 minutes until the skins are crisp and easily pierced.
  3. Alternatively, cook the potatoes in an Instant Pot on Manual High Pressure for 22 minutes.
  4. In a skillet, cook the bacon until crisp and drain on paper towels.
  5. In a bowl, mash the avocados with lemon juice, garlic powder, and salt until smooth.
  6. Set the oven to broil, slice the baked potatoes in half, and scoop out some flesh.
  7. Brush the potato skins with ghee and season with salt and pepper.
  8. Broil the potato skins for 3-6 minutes until they are browned and crisp.
  9. Assemble by spooning guacamole into the potato skins and topping with bacon and green onions.
  10. Serve immediately with ranch dressing.
