Instructions
- Preheat the oven to 400°F and wash the potatoes, piercing them with a fork.
- Bake the potatoes for about 50 minutes until the skins are crisp and easily pierced.
- Alternatively, cook the potatoes in an Instant Pot on Manual High Pressure for 22 minutes.
- In a skillet, cook the bacon until crisp and drain on paper towels.
- In a bowl, mash the avocados with lemon juice, garlic powder, and salt until smooth.
- Set the oven to broil, slice the baked potatoes in half, and scoop out some flesh.
- Brush the potato skins with ghee and season with salt and pepper.
- Broil the potato skins for 3-6 minutes until they are browned and crisp.
- Assemble by spooning guacamole into the potato skins and topping with bacon and green onions.
- Serve immediately with ranch dressing.
