Instructions
- Bake or microwave the potatoes until tender.
- Slice the potatoes in half lengthwise.
- Mash the cut sides to flatten them and add salt, pepper, and any desired toppings.
- Melt butter in a sauté pan over medium-high heat.
- Fry the potatoes skin side down until the bottoms are brown and crispy, about 5 to 10 minutes.
