Ingredients

The potatoes

  • 5 pieces potatoes

The toppings

  • 2 tablespoons butter
  • to taste salt
  • to taste pepper
  • to taste cheese
  • to taste sour cream
  • to taste bacon (or prosciutto)
  • to taste onion (minced)

Instructions

  1. Bake or microwave the potatoes until tender.
  2. Slice the potatoes in half lengthwise.
  3. Mash the cut sides to flatten them and add salt, pepper, and any desired toppings.
  4. Melt butter in a sauté pan over medium-high heat.
  5. Fry the potatoes skin side down until the bottoms are brown and crispy, about 5 to 10 minutes.
