Instructions
- Preheat the oven to 400°F (204°C) and prepare a baking sheet.
- Bake the sweet potatoes for 40-50 minutes until soft, then cool slightly and slice in half.
- Scoop out the flesh, leaving a thin layer, and drizzle the skins with olive oil before baking for 10 minutes.
- Mash the sweet potato flesh with milk, salt, and pepper until smooth.
- Fill the skins with the mashed sweet potato, top with cheese, and bake for 15 minutes until the cheese melts.
- Top with crumbled bacon and serve with sour cream and chives.
