Ingredients

The potatoes

  • 4 medium sweet potatoes

The filling

  • 1 Tablespoon olive oil
  • ¼ cup milk
  • ¼ teaspoon salt
  • to taste ground black pepper
  • 1 cup shredded cheese

The toppings

  • 4 strips bacon
  • to serve sour cream
  • to serve chopped chives

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a baking sheet.
  2. Bake the sweet potatoes for 40-50 minutes until soft, then cool slightly and slice in half.
  3. Scoop out the flesh, leaving a thin layer, and drizzle the skins with olive oil before baking for 10 minutes.
  4. Mash the sweet potato flesh with milk, salt, and pepper until smooth.
  5. Fill the skins with the mashed sweet potato, top with cheese, and bake for 15 minutes until the cheese melts.
  6. Top with crumbled bacon and serve with sour cream and chives.
