  • 4-5 medium sweet potatoes

  • to taste N/A coarse salt
  • a pinch N/A dried rosemary (optional)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Peel the sweet potatoes to create large skins with some flesh attached.
  3. Place the sweet potato skins on a baking sheet and toss with oil and salt.
  4. Roast for 25-30 minutes until crispy and brown, then allow to cool.
  5. Sprinkle with dried rosemary if desired.
