Baked Sweet Potato Skin Fries

sweet potatoes or regular potatoes

crumbled parmesan (exclude if paleo)

optional basil or red pepper topping
Instructions
- 1. Preheat the oven to 400°F and prepare a baking tray.
- 2. Clean the potatoes and peel them, aiming for thicker peels (about ½ inch wide).
- 3. Place the potato skins in a bowl and add the oil and spices, tossing to coat.
- 4. Spread the skins evenly on the baking tray and add more spices if desired.
- 5. Bake for 7-8 minutes.
- 6. Remove from the oven and sprinkle parmesan on top.
- 7. Return to the oven and bake for an additional 6-7 minutes or until crispy.
- 8. Optionally, add dried basil or red pepper before serving.
- 9. Store in a ziplock bag after cooling if not eating immediately.
