Baked Sweet Potato Skin Fries

Ingredients

  • skins from 3 or more potatoes sweet potatoes or regular potatoes
  • 1 tbsp olive oil or avocado oil
  • ¼ tsp black pepper
  • ¼ tsp sea salt
  • 2–3 tbsp crumbled parmesan (exclude if paleo)
  • to taste optional basil or red pepper topping

Instructions

  1. 1. Preheat the oven to 400°F and prepare a baking tray.
  2. 2. Clean the potatoes and peel them, aiming for thicker peels (about ½ inch wide).
  3. 3. Place the potato skins in a bowl and add the oil and spices, tossing to coat.
  4. 4. Spread the skins evenly on the baking tray and add more spices if desired.
  5. 5. Bake for 7-8 minutes.
  6. 6. Remove from the oven and sprinkle parmesan on top.
  7. 7. Return to the oven and bake for an additional 6-7 minutes or until crispy.
  8. 8. Optionally, add dried basil or red pepper before serving.
  9. 9. Store in a ziplock bag after cooling if not eating immediately.
