Instructions
- Heat oil in a large pot to 350°F.
- Fry the sweet potato skins in batches, turning them until golden brown, for 1 to 3 minutes.
- Transfer the fried skins to paper towels to drain excess oil.
- Sprinkle the chips with sea salt and herbs if desired.
- Serve warm or at room temperature, preferably within a few hours.
