Ingredients

  • 5 pieces The skins from fully baked sweet potatoes
  • 1 tablespoon Canola oil (or olive oil for baking)
  • to taste Sea salt
  • to taste Assorted fresh herbs (optional, e.g., sage and rosemary)

Instructions

  1. Heat oil in a large pot to 350°F.
  2. Fry the sweet potato skins in batches, turning them until golden brown, for 1 to 3 minutes.
  3. Transfer the fried skins to paper towels to drain excess oil.
  4. Sprinkle the chips with sea salt and herbs if desired.
  5. Serve warm or at room temperature, preferably within a few hours.
