Baked Sweet Potato Chips

Instructions
- Preheat the oven to 300ºF and line 2 baking sheets with parchment paper.
- Use a mandoline slicer to cut the sweet potato into thin slices, about 1/16th inch thick.
- Arrange the potato slices in a single layer on the baking sheets without much overlap.
- Brush both sides of each slice with olive oil and sprinkle with sea salt.
- Bake for 15 minutes, then flip the chips and bake for another 10 minutes.
- Remove any small chips that are browned at the 25-minute mark, and continue baking for 5-minute intervals until all chips are golden.
- Let the chips cool on the pan for at least 5 minutes before serving.
