Baked Sweet Potato Chips

Ingredients

  • 1 sweet potato washed and scrubbed (about 8 oz.)
  • 2 tablespoons olive oil
  • as needed none fine sea salt

Instructions

  1. Preheat the oven to 300ºF and line 2 baking sheets with parchment paper.
  2. Use a mandoline slicer to cut the sweet potato into thin slices, about 1/16th inch thick.
  3. Arrange the potato slices in a single layer on the baking sheets without much overlap.
  4. Brush both sides of each slice with olive oil and sprinkle with sea salt.
  5. Bake for 15 minutes, then flip the chips and bake for another 10 minutes.
  6. Remove any small chips that are browned at the 25-minute mark, and continue baking for 5-minute intervals until all chips are golden.
  7. Let the chips cool on the pan for at least 5 minutes before serving.
