Instructions
- Preheat the oven to 250°F (121°C) and position the oven rack in the center.
- Rinse and dry the sweet potatoes, then slice them as thinly as possible (about 1/8 to 1/16 inch thick).
- Toss the slices in olive oil to coat lightly and sprinkle with salt.
- Arrange the slices in a single layer on a parchment-lined baking sheet.
- Bake for approximately 1 hour 30 minutes to 1 hour 45 minutes, flipping the chips halfway through for even cooking.
- Check the chips every 10 minutes during the second hour to prevent burning.
- Once they are crisp and golden brown, remove them from the oven and let them rest for about 10 minutes to crisp up further.
- Serve immediately.
