Baked Sweet Potato Chips

Ingredients

  • 2 pieces organic sweet potatoes
  • 2 Tbsp olive oil
  • ¼ tsp sea salt (optional)

Instructions

  1. Preheat the oven to 250°F (121°C) and position the oven rack in the center.
  2. Rinse and dry the sweet potatoes, then slice them as thinly as possible (about 1/8 to 1/16 inch thick).
  3. Toss the slices in olive oil to coat lightly and sprinkle with salt.
  4. Arrange the slices in a single layer on a parchment-lined baking sheet.
  5. Bake for approximately 1 hour 30 minutes to 1 hour 45 minutes, flipping the chips halfway through for even cooking.
  6. Check the chips every 10 minutes during the second hour to prevent burning.
  7. Once they are crisp and golden brown, remove them from the oven and let them rest for about 10 minutes to crisp up further.
  8. Serve immediately.
