Dark Chocolate Sweet Potato Chips

Ingredients

The chips

  • 2 large sweet potatoes
  • 1 Tbsp extra virgin olive oil or coconut oil
  • ½ tsp sea salt
  • ¼ tsp ground cinnamon

The chocolate

  • ¾ cup chopped dairy-free dark chocolate

Instructions

  1. Preheat the oven to 375°F (176°C).
  2. Wash and scrub the sweet potatoes, then thinly slice them.
  3. In a bowl or on a greased baking sheet, toss the sweet potato slices with oil, salt, and cinnamon.
  4. Arrange the sweet potato slices in a single layer on baking sheets and bake for 30-45 minutes, flipping occasionally.
  5. While the chips are baking, melt the chocolate over a double boiler or in the microwave.
  6. Once the chips are crisp, remove them from the oven and dip them in the melted chocolate.
  7. Set the chocolate-dipped chips on a parchment-lined surface to cool.
