Ingredients

The chips

  • 1 sweet potato sweet potato
  • non-stick spray non-stick spray

The seasoning

  • 4 tablespoons kosher salt or sea salt
  • 2-2 ½ tablespoons fresh minced rosemary
  • 1 ½ teaspoon garlic powder

Instructions

  1. Cut a piece of parchment to fit the glass plate inside your microwave.
  2. Slice the sweet potato with a mandoline and lay the slices in a single layer on the parchment.
  3. Spray lightly with non-stick spray and sprinkle very lightly with the salt mixture.
  4. Microwave on 50-60% power for 8-10 minutes, keeping an eye on them after about 5 minutes until they start to lightly brown.
  5. Let the chips cool completely before eating and store in an airtight container.
  6. For the rosemary salt, combine salt, rosemary, and garlic powder in a food processor and process until granules are evenly sized.
