Ingredients

The base

  • 4 small sweet potatoes
  • Drizzle N/A oil (optional, can also use some broth)
  • Sprinkle N/A sea salt

The filling

  • ¼ cup plain dairy free yogurt
  • 2-4 tablespoons hot sauce
  • ½ cup black beans (drained and rinsed)
  • ¼ cup corn (can use defrosted frozen or fresh)

Optional toppings

  • N/A N/A sautéed peppers
  • N/A N/A sliced green onions
  • N/A N/A avocado
  • N/A N/A cheese sauce
  • N/A N/A salsa
  • N/A N/A chopped cilantro
  • N/A N/A more hot sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rub the sweet potatoes with oil or broth and sprinkle with salt.
  3. Bake the potatoes directly on the oven rack for 45 minutes.
  4. Let the potatoes cool slightly, then cut them in half and scoop out the insides, leaving a small edge.
  5. Place the skins cut side down on a parchment-lined cookie sheet to keep warm.
  6. In a bowl, mix the scooped potato with yogurt and hot sauce until combined.
  7. Add black beans and corn to the mixture and mix well.
  8. Stuff the skins with the filling mixture.
  9. Bake the stuffed skins for an additional 10-15 minutes.
  10. Top with desired toppings and serve warm.
