Instructions
- Preheat the oven to 350°F (175°C).
- Rub the sweet potatoes with oil or broth and sprinkle with salt.
- Bake the potatoes directly on the oven rack for 45 minutes.
- Let the potatoes cool slightly, then cut them in half and scoop out the insides, leaving a small edge.
- Place the skins cut side down on a parchment-lined cookie sheet to keep warm.
- In a bowl, mix the scooped potato with yogurt and hot sauce until combined.
- Add black beans and corn to the mixture and mix well.
- Stuff the skins with the filling mixture.
- Bake the stuffed skins for an additional 10-15 minutes.
- Top with desired toppings and serve warm.
