Ingredients

The potatoes

  • 3 pounds yellow potatoes

The flavorings

  • ½ cup broth
  • 8 cloves garlic
  • ¼ cup unsalted butter
  • 2 teaspoons sea salt
  • ½ teaspoon freshly ground black pepper

The creaminess

  • 4 ounces cream cheese
  • 2 tablespoons half and half

Instructions

  1. Peel and cube the potatoes.
  2. Pour the broth into the Instant Pot.
  3. Add the potatoes, smashed garlic, 1 tablespoon of butter, salt, and pepper to the pot.
  4. Seal the lid and set the Instant Pot to Manual High Pressure for 8 minutes.
  5. When the time is up, do an instant release of the pressure.
  6. Add the remaining 3 tablespoons of butter and mash the potatoes to your desired consistency.
  7. Stir in the cream cheese and half and half until melted and fully incorporated.
  8. Add more half and half as needed to reach the desired consistency.
