Ingredients

  • cups macadamia nuts
  • cups shredded unsweetened coconut
  • ¼ tsp vanilla extract
  • 4-6 Tbsp powdered sugar

Instructions

  1. Preheat the oven to 350°F (176°C) and place macadamia nuts on a baking sheet.
  2. Bake the nuts for 8-10 minutes until golden and fragrant, then let them cool.
  3. Blend the cooled macadamia nuts in a food processor until they form a meal and set aside.
  4. Blend the shredded coconut in the food processor until creamy and smooth, scraping down the sides as needed.
  5. Add the macadamia nut meal and vanilla to the coconut mixture and blend until smooth.
  6. Gradually add powdered sugar, one tablespoon at a time, until the desired sweetness is reached.
  7. Use the frosting immediately or refrigerate it to thicken before use.
