Coconut Cream Frosting

Instructions
- Heat coconut milk, agave, and salt in a medium saucepan and simmer for 10 minutes.
- In a small bowl, combine arrowroot and water to form a smooth paste.
- Pour the arrowroot mixture into the saucepan and whisk vigorously until combined, then bring to a brief boil until shiny.
- Remove the pot from heat and gradually blend in coconut oil using a hand blender.
- Allow the pot to cool for 10 minutes.
- Place the pot in the refrigerator for 45-120 minutes until the frosting solidifies and turns white.
- Remove from the refrigerator and blend again with a hand blender until fluffy.
- Spread the frosting over cake or cupcakes.
