Coconut Cream Frosting

Ingredients

  • 1 cup full fat coconut milk
  • 1 cup agave nectar or honey
  • a pinch celtic sea salt
  • 5 teaspoons arrowroot powder
  • 1 tablespoon water
  • 1ΒΌ cups coconut oil

Instructions

  1. Heat coconut milk, agave, and salt in a medium saucepan and simmer for 10 minutes.
  2. In a small bowl, combine arrowroot and water to form a smooth paste.
  3. Pour the arrowroot mixture into the saucepan and whisk vigorously until combined, then bring to a brief boil until shiny.
  4. Remove the pot from heat and gradually blend in coconut oil using a hand blender.
  5. Allow the pot to cool for 10 minutes.
  6. Place the pot in the refrigerator for 45-120 minutes until the frosting solidifies and turns white.
  7. Remove from the refrigerator and blend again with a hand blender until fluffy.
  8. Spread the frosting over cake or cupcakes.
