Coconut Cream Frosting

Ingredients

  • 1 cup full fat coconut milk
  • 1 cup agave nectar or honey
  • a pinch Celtic sea salt
  • 5 teaspoons arrowroot powder
  • 1 tablespoon water
  • 1ΒΌ cups coconut oil

Instructions

  1. Heat the coconut milk, agave, and salt in a medium saucepan for 10 minutes.
  2. Mix the arrowroot powder and water in a small bowl to form a smooth paste.
  3. Pour the arrowroot mixture into the saucepan and whisk vigorously until combined.
  4. Bring the mixture to a brief boil until it becomes shiny.
  5. Remove from heat and gradually blend in the coconut oil using a hand blender.
  6. Allow the mixture to cool for 10 minutes.
  7. Refrigerate for 45-120 minutes until the frosting solidifies and turns white.
  8. Blend again with a hand blender until fluffy.
  9. Spread the frosting over cakes or cupcakes.
