Cheesy Zucchini Frittata

Ingredients

The frittata

  • 8 large eggs
  • ¼ cup whole milk
  • ½ tsp salt
  • ¼ tsp ground white pepper
  • ½ tsp chili pepper flakes
  • 2 medium zucchinis, grated and squeezed dry
  • 1 cup grated sharp cheddar

Optional garnish

  • 1 medium zucchini, sliced thinly
  • ½ cup sharp cheddar
  • to taste chopped fresh parsley
  • to taste ground black pepper

Instructions

  1. Preheat the oven to 375°F and place a well-seasoned and oiled 10" cast iron skillet in the oven.
  2. In a large mixing bowl, combine the eggs, milk, salt, pepper, and chili pepper flakes and beat until slightly frothy.
  3. Add the grated zucchini and cheese, and stir delicately until well combined.
  4. Carefully pour the frittata mixture into the hot cast iron skillet.
  5. Bake for 20 minutes, or 25 minutes if not garnishing.
  6. If garnishing, arrange thin slices of zucchini on top and sprinkle with grated cheese, then bake for an additional 8 to 10 minutes until the cheese melts and browns.
  7. Broil for 2-3 minutes for extra browning if desired.
  8. Let the frittata rest for about 5 minutes, garnish with parsley and black pepper if desired, slice, and serve.
