Instructions
- Preheat the oven to 375°F and place a well-seasoned and oiled 10" cast iron skillet in the oven.
- In a large mixing bowl, combine the eggs, milk, salt, pepper, and chili pepper flakes and beat until slightly frothy.
- Add the grated zucchini and cheese, and stir delicately until well combined.
- Carefully pour the frittata mixture into the hot cast iron skillet.
- Bake for 20 minutes, or 25 minutes if not garnishing.
- If garnishing, arrange thin slices of zucchini on top and sprinkle with grated cheese, then bake for an additional 8 to 10 minutes until the cheese melts and browns.
- Broil for 2-3 minutes for extra browning if desired.
- Let the frittata rest for about 5 minutes, garnish with parsley and black pepper if desired, slice, and serve.
