Zucchini Frittata

Ingredients

The Frittata

  • 8 large eggs
  • ¼ cup heavy cream or almond milk
  • 1 teaspoon Sriracha
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

The Vegetables

  • 1 large zucchini
  • 1 bunch green onions
  • 1 medium jalapeno

The Cheese

  • 4 ounces cheddar cheese

Instructions

  1. Preheat the broiler and position the rack in the upper third of the oven.
  2. In a bowl, whisk together eggs, cream, Sriracha, chili powder, smoked paprika, salt, and pepper.
  3. Spray a 10-inch oven-safe skillet with oil and heat over medium heat.
  4. Add zucchini, green onion, and jalapeno to the skillet and cook for 3 to 5 minutes, stirring often.
  5. Sprinkle the vegetables with grated cheese.
  6. Re-whisk the egg mixture and pour it over the cheese and vegetables.
  7. Cook over medium heat for 5 to 6 minutes until the eggs are partially set, lifting the edges to allow uncooked portions to flow underneath.
  8. Transfer the skillet to the broiler and cook for 2 to 3 minutes until browned.
  9. Run a spatula around the edge and underneath, then cut into slices and serve.
