Instructions
- Preheat the oven to 350°F and grease an 8-inch square metal baking pan.
- Whisk together the almond flour, cassava flour, cinnamon, baking soda, salt, and cardamom in a medium bowl.
- In a stand mixer, blend the softened ghee and maple sugar until fluffy.
- Add the eggs, coconut milk, lime zest, lime juice, and vanilla to the mixture and beat until combined.
- Gradually mix in the flour mixture until fully incorporated.
- Fold in the mixed berries gently into the batter.
- Transfer the batter to the prepared baking pan and smooth the top.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Allow the cake to cool in the pan, then cut into squares and serve.
