Ingredients

  • 1 cup Avocado oil spray or ghee
  • 1 cup finely ground almond flour
  • ¾ cup cassava flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon Diamond Crystal kosher salt
  • ½ teaspoon ground cardamom
  • ½ cup ghee or coconut oil, softened
  • cup maple sugar or coconut sugar or granulated allulose
  • 2 large eggs
  • cup full-fat coconut milk
  • 2 teaspoons grated lime zest
  • 1 teaspoon lime juice
  • 1 teaspoon vanilla extract
  • cups mixed berries
  • 1 tablespoon keto confectioners sugar (optional)

Instructions

  1. Preheat the oven to 350°F and grease an 8-inch square metal baking pan.
  2. Whisk together the almond flour, cassava flour, cinnamon, baking soda, salt, and cardamom in a medium bowl.
  3. In a stand mixer, blend the softened ghee and maple sugar until fluffy.
  4. Add the eggs, coconut milk, lime zest, lime juice, and vanilla to the mixture and beat until combined.
  5. Gradually mix in the flour mixture until fully incorporated.
  6. Fold in the mixed berries gently into the batter.
  7. Transfer the batter to the prepared baking pan and smooth the top.
  8. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  9. Allow the cake to cool in the pan, then cut into squares and serve.
