Berry Coffee Cake

  • ¾ cup granulated sugar
  • ¼ cup unsalted butter
  • 1 teaspoon pure almond extract
  • 1 cup whole wheat pastry flour
  • 1 cup all purpose flour
  • 2 ½ teaspoons baking powder
  • ¾ teaspoon kosher salt
  • ¾ cup almond milk
  • 1 large egg
  • 2 cups mixed berries

Almond Vanilla Glaze

  • ½ cup powdered sugar
  • ¼ teaspoon pure vanilla extract
  • teaspoon pure almond extract
  • 1 teaspoon almond milk

Instructions

  1. Preheat the oven to 375°F and prepare a 9-inch springform pan.
  2. Make the crumb topping by mixing sugar, flour, cinnamon, and salt, then incorporating butter until crumbs form. Stir in sliced almonds.
  3. In a separate bowl, cream sugar and butter until fluffy, then mix in almond extract.
  4. Combine dry ingredients in one bowl and wet ingredients in another. Alternate adding these to the creamed mixture until combined.
  5. Fold in the berries gently.
  6. Spread the batter in the prepared pan and top with the crumb mixture.
  7. Bake for 40-50 minutes until golden and a toothpick comes out clean.
  8. Cool for 10 minutes, then remove from the pan and drizzle with glaze.
